Start with the position, not the furniture

Before you fall for a table in a showroom, walk your garden at the times you actually plan to eat outside. The best outdoor dining areas come down to three things: distance from the kitchen, shelter from wind, and where the evening sun lands. Keep the table within five to ten metres of the back door — far enough from the bins, close enough to carry a tray of glasses without a second trip. A smooth path or a few stepping stones beats a wobbly route across gravel when your hands are full.

Prevailing UK winds arrive from the south-west, often with rain attached. A corner formed by a fence, a wall, or a mature hedge will do more for comfort than any parasol. Avoid the lowest point of the garden, where cold air pools on still evenings, and check where shade falls at seven o'clock in July — a spot that looks sunny at noon can be shadowed exactly when you sit down.

Get the footprint and the hardstanding right

Allow roughly 75 to 90 centimetres of table edge per diner and at least 90 centimetres behind each chair so people can push back and stand. A rectangular table about 1.8 by 0.9 metres seats six; a round table 1.2 metres across is generous for four. Measure the furniture, add the chairs pulled out, then measure again — most dining areas disappoint because the table fits but the people do not.

Grass under a dining table rarely survives a British summer. Paving, decking, or self-binding gravel all work well. Keep the surface level with a gentle fall of about 1 in 60 away from the house so rainwater drains rather than pooling under the chairs. Timber decking feels warmer underfoot in spring and autumn; stone or porcelain paving stays cooler in a heatwave and sweeps clean easily. Avoid sitting beneath trees that drop sap, blossom, or fruit.

Choose furniture and materials that will last

Buy for the climate you have, not the one you wish for. A few materials earn their keep outdoors:

• Teak and other durable hardwoods — weather to a soft grey, need little more than an occasional clean, and can be re-oiled if you prefer the original colour.
• Powder-coated aluminium — light enough to move single-handed, will not rust, and suits modern gardens. Check the coating after winter.
• Cast aluminium or wrought-style metal — heavy enough to stay put in a gust, and comfortable with a cushion.
• Synthetic rattan and recycled plastic — low maintenance and genuinely weatherproof, though plastic can feel warm against bare legs.

Avoid glass-topped tables if children or strong gusts are part of daily life, and be wary of very light folding sets that take flight. Choose quick-drying foam cushions and store them in a lidded box — dry cushions are the difference between a spontaneous lunch and twenty minutes of hunting for covers.

Plan shade and shelter before you buy a parasol

Shade is not a luxury in a British garden; it makes a south-facing terrace usable at midday. A parasol through the table is space-efficient, but a cantilever model can be angled to follow the sun and leaves the table edge free. The base matters more than the canopy: a water-fillable base needs to be genuinely full, and 25 kilograms is a sensible minimum. In a windy garden, bring the parasol in whenever you leave it.

For permanent shelter, a pergola with climbers gives dappled shade and a sense of room, though it will not keep rain off. A retractable awning over a patio door is a practical middle ground, and slatted screens or a trellis with jasmine slow the wind without blocking light.

Light, scent, and the details that make people linger

Outdoor dining rarely ends when the plates are cleared. Low-level lighting is kinder than a single bright wall light: uplighters in a border, a festoon on a tensioned wire, or a few candle lanterns keep the atmosphere warm without glare. Keep light sources out of eyelines and away from the table itself, or you will simply attract insects to the food.

Plant herbs within arm's reach — rosemary, thyme, sage, and a pot of mint — so a last-minute garnish needs no trip indoors. Scented climbers such as jasmine and honeysuckle are lovely near seating, but keep prickly plants away from the backs of chairs. A trolley or a sturdy tray means one journey instead of five.

Extend the season and look after your investment

With a little planning, a well-designed area can be used from early spring to late autumn. A fire pit or chiminea adds warmth and a focal point, but site it clear of low branches and check which way the smoke drifts on a still evening before committing. Radiant patio heaters work better than blown-air models in a breeze, and a basket of blankets by the door encourages people to linger.

In autumn, clean furniture with warm soapy water and let it dry fully before covering it with a breathable cover rather than plastic, which traps condensation. Store cushions indoors, bring parasols in, and clear paving joints and drainage gullies before the winter rain. Look after the space through the winter and it will be ready the moment the first warm evening arrives — a date worth being ready for in this country.
